KULDEEP SINGH
Chef Director, Mela Restaurant

Kuldeep SinghKuldeep Singh, is the Chef Director of the Mela Group of restaurants which he helped to co-found (along with his partners Ashraf Rahman and Dinesh Modi) in 2000. He is also a partner with Raminder Malhotra the Ayurvedic executive chef in the group. Kuldeep is a well-respected chef who has worked all over India and in London before starting up Mela.

His partner Raminder is very much in direct charge of the chefs at the restaurants and is an award-winning cook who has prepared meals for royalty. Raminder and Kuldeep were at catering college together in India. Kuldeep finished his post-graduate training in Bombay before immigrating to London.

Kuldeep began in London at the semi-legendary Red Fort, where he was hired to run a food festival. He worked there for a month before the owner offered him a job, launching a new concept. That was the creation of Soho Spice in 1997. After 2 years, he left Soho Spice and set up his own restaurant in Sydenham. He returned to central London with the launch of Mela in 2000, Chowki in 2004 and Cheshire-based 'Dilli' - the UK's first Ayurvedic Restaurant - in 2005. His latest venture is '3 Monkeys' in Herne Hill.

Mela Dinners are a celebration of Indian country style cuisine and a reflection of it's uniquely wholesome quality. From the Himalayan foothills to the Peninsula's tip, the food varies according to it's location, but everywhere it is characterized by it's robust aromas, glowing colours, earthy flavours and the evocative taste of exotic masalas. 'Chowki' (named after the traditional Indian dining table) offers relaxed dining in a canteen style setting - along the home style Indian cooking of 'Mela'.
